Here is my pattern for a simple hat with no sew brim. I see a lot of patterns for beanies like this with the brim made separately and then sewn on. I wanted the stretchy style of brim but without the sewing. This pattern uses one continuous thread from the top all the way to the end of the brim.
The hat I make in the video tutorial fits age 3-6. You can use this pattern to make it in any size, just skip or add some increase rounds and shorten or increase the length. See the notes in the pattern on how to do this.

Start by making a magic ring. Alternatively you can chain 4 and slip stitch in the first chain to make a ring.

Rnd 2: Ch 2 and hdc in same space. 2 hdc in top of next stitch and each stitch around, sl st to join (16 hdc)
Rnd 3: Ch 2 and hdc in same space. *1 hdc in next, 2 hdc in top of next stitch, rep from * around, sl st to join (24 hdc)

After you are done increasing:
Ch 2 and hdc in top of next stitch and each one around. Sl st to join in top of first hdc. Check you maintain the same number of stitches as your last increase round. Keep repeating this round until you have the desired length (top of ears). For the 3-6 year hat I made in the video I did 8 rounds. Do not fasten off.
Next we make the brim.
Chain 5 and Dc in the 3rd chain from hook each of next 2 chains. (If you want a wider brim for a larger hat chain 6 or 7, dc in 3rd chain from hook and in the next 3 or 4 chains)
*Sl st in each of next 2 hdcs on body of hat. Turn the hat so that the inside of the brim is facing you. FPDC around each of the 3 DCs and the chain 2 on last row of brim. Ch 2 and turn FPDC around each dc on previous row. Repeat from * around hat.
When you have worked all around the hat, sl st in top of last hdc. Sl st in top of each Dc through both thicknesses on the outside of the hat the brim of the hat. (I joined the brim on the outside of the hat to continue the ribbing pattern, you can slip stitch on the inside of the brim if you prefer.) Fasten off and cut yarn and weave in ends – only 2 ends to weave – yay!
